Engang var Montgueux regnet som Champagnes svar på Montrachet i Bourgogne – altså den absolutte top og i rig, overdådig stil. I dag er centrum i Champagne flyttet nordpå, men i det sydlige Montgueux laver enkelte bønder stadig eminent champagne på det kalkede terroir. Denis Velut er en af dem og hans champagner tilhører den lille gruppe af must-drink, hvis man skal forstå, hvad champagne også kan være udover mainstream boblevand. Velut laver ægte håndværksvin, der senest har fået Parkers mand i Champagne op at ringe med klokken. Vi har købt en lille mængde – mere kan man ikke få ud af Denis, der aldrig producerer over 30000 flasker om året. Lively and precise on entry, then fleshy and broad in the mid-palate, showing energetic pit fruit, melon and honeysuckle flavors and a touch of chalky minerality.
